Jackfruit Skewers with Peanut Sauce

Feel like grilling, but prefer no meat or fish? Or do you have vegetarian guests? Then these jackfruit skewers are a lovely alternative.

As you may know, jackfruit has become extremely popular in recent years, especially among vegetarians. Jackfruit is a fruit that has quite a fleshy structure. For example, you can also make rendang out of it.

In this recipe we are going for skewers. We grill them on the barbecue and serve them with homemade peanut sauce. By the way, you can also just prepare it in the pan. Then put some oil in the pan and bake them for 10 minutes until they are brown all around.

Ingredients

  • 1 can jackfruit young green
  • 2 spring onion finely chopped

Marinade

  • 1 tbsp tamarind paste
  • 2 tbsp soy sauce
  • 1 tsp sambal
  • 1 tsp ginger grated
  • 1 clove garlic crushed
  • 1 tbsp sunflower oil

Peanut Sauce

  • 80 gr peanut butter 100% peanut butter or peanut butter of your own choice
  • 50 ml milk semi-skimmed
  • 2 tbsp soy sauce
  • 2 tsp sambal

Instructions

  • Drain the jackfruit in a colander. Wash it with cold running water for 3 minutes. This way it becomes less acidic. Then let it drain again.
  • Halve all pieces of jackfruit.
  • Place the ingredients for the marinade in a bowl and mix well. Add the pieces of jackfruit and mix the pieces with the marinade. Put it in the fridge and let it marinate for an hour.
  • Place 4 skewers in a bowl of water to prevent them from burning on the barbecue.
  • Prepare the barbecue for direct grilling. Maintain a temperature of approximately 250 °C.
  • Then thread the pieces of jackfruit onto the skewers. Place them on the grid and grill for 5 minutes per side.
  • Mix the ingredients for the peanut sauce in a saucepan. Bring it to a gentle boil and then reduce it back to low heat.
  • Serve the sauce on top of the skewers and garnish them with the spring onion.
