Atomic Buffalo Turds

Jalapeños from the barbecue are a delicious snack for drinks or as an amuse-bouche during a culinary evening. In America they are also called Atomic Buffalo Turds (ABT). You will regularly find this name on the internet.

We fill the jalapeños with cream cheese. Then we wrap bacon around it. Finally, we sprinkle a dry rub on top of it. This adds a nice edge to the dish.

The nice thing about this barbecue recipe is that you can vary with it a lot. You can put cheddar strips in between. We’ve even come across recipes where frankfurters were placed on top of the cream cheese. Although it must, of course, remain tasty, you can let your creativity run wild!

It is a snack with a spicy touch. You can make that flavour even spicier if you don’t remove all the seeds that are inside. So you are partly in control.

Ingredients

  • 12 Jalapeños or other peppers of your choice
  • cream cheese
  • cheddar optional
  • breakfast bacon
  • dry rub

Instructions

  • Prepare the barbecue for indirect grilling. The temperature does not matter so much for this dish. Maintain a temperature of about 170-200℃.
  • Cut all jalapeños in half. Remove the seeds and pits. The more you leave, the spicier the snack will become.
  • Stuff the jalapeños with cream cheese. You can then place a strip of cheddar on top if desired. To do so, cut the cheddar into strips and place them on top of the stuffed jalapeño.
  • Wrap the bacon around the jalapeños. Next, add all the jalapeños together and rub them with one of your favourite dry rubs.
  • Place the jalapeños on the barbecue and cook for about 30 minutes until the bacon is crispy.
