Pad thai sauce

Pad thai is a classic Thai dish that you eat in combination with rice noodles. The typical spicy taste of the pad thai is a favourite in Thailand. You really don’t have to buy a ready-made pad thai sauce anymore, because you can prepare your own pad thai sauce in no time.

What is pad thai sauce?

The pad thai sauce is the most important part of a good pad thai. It consists of four main basic elements: salty, sweet, sour and spicy. It is a mixture made from: fish sauce for salt, palm sugar (brown sugar or honey) for sweet, tamarind (or lemon juice) for sour, and water. Dried chilli or chilli powder give the sauce a nice spicy taste.

The sauce is prepared in advance so that it is ready whenever you need it. After the ingredients for the pad thai and the rice noodles have been stir-fried in a wok, the spicy sauce is added. The pad thai is ready when the sauce is well absorbed.

Ingredients

  • 4 tbsp tamarind
  • 80 ml fish sauce
  • 80 gr palm sugar or brown sugar
  • 160 ml chicken stock
  • 30 ml soy
  • 1 tsp sriracha the more, the spicier
  • pinch white pepper

Instructions

  • Place all the ingredients in a bowl and stir everything well together. Add white pepper to taste.
