Flat iron steak: What is it? And how do you cook it?

From frying it, grilling it to many recipes

The flat iron steak is a reasonably priced but remarkably tasty meat. It’s almost as tender as the tenderloin and for a much lower price. A delicious piece of beef!

How do you cook flat iron steak?

The fat marbling gives the flat iron steak a rich, meaty taste. It‘s therefore okay to cook the flat iron steak without marinade. Yet there are many delicious recipes where the taste is expressed even more when combined with a marinade.

The meat tastes best when it’s cooked medium-rare. Try not to go higher than medium.

Take the meat out of the fridge an hour before you’re going to cook it. Pat it dry with kitchen paper and season it with some salt.

Frying and roasting

We will first fry the flat iron steak in a pan. Then we’ll let it slowly cook in the oven.

  1. Preheat the oven to 80℃.
  2. Melt some butter in a pan and fry the flat iron steak on both sides for a few minutes until it turns brown.
  3. Place the meat in the oven and let it cook slowly until it has reached a core temperature of 48 – 50 ℃.
  4. Remove the steak from the oven and let it rest, loosely covered with aluminum foil, for about 5 minutes. This allows the meat juices to distribute well through the meat, which benefits the taste.
  5. Cut the steak into thin slices and season it with salt and pepper.

Grilling

We work with two heat zones when we cook the flat iron steak on a barbecue. We’re going to grill the steak directly for a few minutes first. Then we let it cook slowly on a less hot zone.

  1. Prepare the barbecue for direct grilling. Maintain a working temperature of 250-300℃.
  2. Place the flat iron steak on the hot part of the barbecue and grill both sides for a few minutes.
  3. Place the meat on a less hot zone. Maintain a temperature of about 115-125℃. Let it cook slowly until it has reached a core temperature of 48 – 50 ℃.
  4. Remove the steak from the barbecue and let it rest, loosely covered with aluminum foil, for 5 minutes. This allows the meat juices to distribute well through the meat, which benefits the taste.
  5. Cut the steak into thin slices and season it with salt and pepper.

Ingredients

The steak

  • 1 flat iron steak
  • salt coarse sea salt
  • pepper

The sauce

  • 1 tbsp sambal bajak
  • 50 grams butter
  • 2 cloves garlic
  • 1 tsp turmeric ground
  • 1 tsp ginger ground
  • 1 tsp ketoembar ground

Instructions

The flat iron steak

  • Remove the flat iron steak from the fridge an hour in advance and let it reach room temperature. Pat the meat dry with a paper towel and sprinkle it with salt and pepper.
  • Prepare the barbecue. Place the flat iron steak on the barbecue and grill both sides for a few minutes, so that it turns brown.
  • Then we let the flat iron steak cook slowly. Prepare the barbecue for indirect grilling and place the meat on the grid. Monitor the temperature of the meat with a meat thermometer. The flat iron steak is a thin piece of meat, so you should not leave it on the barbecue for too long.
  • Remove the meat from the barbecue when it reaches a core temperature of 48 – 50 °C. Let it rest for 5 minutes, while it is loosely covered with aluminum foil. This allows the meat juices to spread well through the meat.
  • Cut the meat into thin slices against the grain of the meat. This makes the meat more tender. Sprinkle some salt and pepper over the meat, if desired.

The sauce

  • Heat a frying pan over high heat. As soon as the pan is hot, put the margarine in the pan and let it fizz. Then add the garlic and fry it for about half a minute.
  • Add the sambal and the spices and let the mixture set on low heat for a few minutes. In the meantime, keep stirring the sauce regularly.
  • Spoon the sauce over the sliced meat pieces.
